Weight Watchers Pineapple-Coconut Upside Down Cake

Pineapple-Coconut Upside Down Cake!!⠀

I’ve been waiting to try this one for awhile and it did not disappoint!!⠀

I used Protein Milkshake protein powder as they base so not only is it delicious but has 20 grams of protein as well!⠀

Here’s how to make it!⠀

For the pineapple topping:⠀
• Melt 1 TBSP butter in an 8oz ramekin or mug⠀
• Stir in 1 TBSP of brown sugar @swervesweetie ⠀
• Add about 50g of crushed or chopped pineapple⠀

For the cake, in a bowl mix together:⠀
• 1 egg⠀
• Splash of vanilla⠀
• 1/2 tsp baking powder⠀
• 1TBSP coconut flour⠀
• 1 serving Protein Milkshake 
• 6 drops of @oooflavors pineapple 
• 2 TBSP almond milk⠀

Pour the batter over the brown sugar and pineapple ramekin/mug and and bake for about 25 minutes in a 350 degree oven! ⠀

You could microwave this as well if you want to make a mug cake but I prefer baking mine! ⠀

Let the cake cool for at least 5 minutes before running a knife along the edges and flipping the cake.⠀

Serve warm or room temp and top with half a maraschino cherry for fun!⠀
