Keto-Friendly Funnel Cake

Do Spring days make you think of the fair? These nice temperatures along with being on quarantine has me missing events like the fair. At a fair I always order a funnel cake. So I have made a recipe that you can to enjoy...Funnel Cake Bites! These Funnel Cake Bites are made with Protein Milkshake's Cupcake Batter protein mix! With @gooddeesmix sprinkles and @sweetlifeflavorco funnel flavoring it reminds me of birthday cake! So I present to you Funnel Birthday Cake Bites!

These are delicious! I've tried many keto funnel cake recipes in the past, and they never turned out. Either soggy, too dense, not crisp, all flops! I called my favorite Baker (my Grandma) for advice, researched online, learned about mozz from @coffeeandketosis making chaffles, and had trial and error to finally make a recipe I love! I also made a cake dip that is delicious all by itself too! Enjoy.

Tricks that helped me...use mozzarella cheese...helps it become crunchy like chaffles. You will not taste it! Promise...
Use more lupin flour instead of almond flour. Lupin crisps up much nicer. I also fried these in Avocado oil. Temp was on low to medium so it was a nice low fry. If you get the oil too hot they will crumble and brown too quickly...trust me I learned haha.

These are keto friendly, sugar free, and will blow your mind!

Funnel Cake Recipe:
1/3 cup lupin flour
1 serving of Protein Milkshake
20 drops @sweetlifeflavorco funnel cake
2 tbsp almond flour
3 tbsp of swerve powdered sugar
1/2 teaspoon of xanthum gum
1 egg
1 egg white
1/2 teaspoon cake extract
2 tbsp hwc
10 tbsp water
1/3 cup fine chopped mozzarella cheese
3 tbsp @gooddees sprinkles

Whipped topping
1/2 cup hwc
1/4 cup powdered sugar
1 drop of pink color dye
1/2 tsp cake extract
2 squirts liquid @stevia
10 drops @sweetlifeflavorco vanilla milkshake
